Ingredients
- 1 tablespoon olive oil (or water)
- 1 diced brown onion
- 3 crushed cloves garlic
- 3 cm piece of grated ginger
- 1 tablespoon berbere spices
- 1 cup red lentils
- 2-3 cups vegetable stock
- 2 chopped tomatoes
- 1/4 cup tomato paste
- Salt and pepper to taste
Directions
On high heat, warm up the oil in a large pot.
- Add and saute the onion for 2 minutes. Then, toss in the chopped tomatoes, red lentils, tomato paste and vegetable stock and boil for 5 minutes.
- Reduce to medium heat and simmer the lentils for 20 minutes or until desired tenderness. Season with salt, pepper and serve.
