1 tbsp olive oil
1 cup red lentils, rinsed
4 cups vegetable broth
1 can (15 oz) diced tomatoes
2 tsp KULA Berbere Spice Blend
Salt to taste
A squeeze of lemon juice for serving
In a large pot, combine rinsed lentils, vegetable broth, diced tomatoes, and KULA Berbère Spice Blend.
Bring the mixture to a boil, then reduce heat and simmer, uncovered, for 20-25 minutes, or until the lentils are tender.
Season with salt and finish with a squeeze of lemon juice before serving.
