Experience a soulful fusion of Afro-Caribbean flavors in this 15-minute Coconut Chickpea Curry. A quick, umami-rich plant-based bowl for busy weeknights
1 tbsp olive oil
1 onion, chopped
1 can (15 oz) chickpeas, rinsed and drained
1 can (13.5 oz) coconut milk
2 tsp KULA Curry Spice Blend
Salt and pepper to taste
Fresh cilantro and rice for serving
Heat oil in a pan over medium heat. Sauté the onion until soft
Stir in the KULA Curry Spice Blend and cook for 1 minute until fragrant.
Add the chickpeas and coconut milk, stirring to combine. Bring to a simmer and cook for 5-7 minutes.
Season with salt and pepper. Serve over a bed of warm rice and top with fresh cilantro.
